Gouda Pesto Sandwich Recipe | Plettenberg Bay

Ingredients for Spinach Pesto:

1 cup baby spinach leaves

1tbs olive oil

2tbs almonds

Salt

Pepper

Directions for pesto:

Add all ingredient for pesto (food processor, blend until smooth, set aside)

 

Ingredients for sandwiches:

4 pieces sourdough

butter

6 slices gouda (could mix gouda and mozzarella)

1/2 cup baby spinach with Rocket

Spinach pesto (prepared)

Directions for sandwiches:

Set out 4 slices of bread and butter the outside facing sides. On the inside of the 4 slices, add spinach pesto (about 3tbs per side), then top with 2 slices of gouda on half. Add 1/4 cup baby spinach & herb mix leaves, then place 1 piece of gouda on top, and place the remaining slice of bread on top (spinach pesto side down, butter side up).

Heat pan on medium heat, place sandwiches and cook for 3-5 minutes, or until it’s brown. Flip sandwiches and cook for 1-2 minutes on opposite side (this side will brown faster), remove. Cut in half and serve immediately!
